My favorite pecan recipe is my sweet potato casserole. This is a Thanksgiving favorite in my family.
I received this recipe from a coworker 32 years ago and we still use it.
To celebrate the Luther Pecan Festival, staff members and officials of the Town of Luther have submitted their favorite pecan recipes, featuring Luther’s Couch pecans!
Cathy’s Sweet Potato Casserole
3 cups cooked-mashed sweet potatoes (canned yams acceptable substitution)
1/2 c sugar
2 eggs
1/2 c milk
1/2 tsp salt
1/2 stick of butter
1/2 tsp vanilla
Topping
1 cup brown sugar
1/3 stick butter
1/3 c flour
1 cup Couch Orchard Pecans
Mix ingredients first set of ingredients well and pour into greases casserole dish.
Mix topping ingredients with pastry blender to break up butter into small crumbly chunks.
Top casserole with topping and bake for 35 minutes in 350 degree oven.
