Scherrie’s Sugar Plum Pecan Cake

The baked goods counter at Josephine’s Café was always full of delicious cakes and pies when Scherrie Pidcock operated the restaurant. Even though now she spends her days as Town Manager at Luther Town Hall, she bakes a cake or a pie when she can! Here’s Scherrie’s Sugar Plum Pecan Cake!

Sugar Plum Pecan Cake

Cake ingredients:

1 ½ cup Sugar
2 cups All Purpose Flour
1 tsp baking soda
1 tsp ground nutmeg
1 tsp ground cinnamon
½ tsp ground clove
1 tsp salt
1 cup vegetable oil
3 large eggs, beaten
½ cup buttermilk
1 tsp vanilla extract
1 cup cooked, chopped, pitted dried plums
1 ½ cup chopped COUCH PECANS

Topping ingredients:

½ cup butter, cubed
1/3 cup buttermilk
1 tsp vanilla extract
½ tsp baking soda
¾ cup sugar

Preheat oven to 350 degrees. In a large bowl, combine sugar, flour, baking soda, nutmeg, cinnamon, clove and salt. All oil, eggs, buttermilk and vanilla. Mix Well. Fold in the dried plums and PECANS. Pour into an ungreased 13×9 inch baking pan. Bake for about 45 minutes or until a toothpick comes out clean from the middle of the cake. Poke holes all over the cake with a fork.

When your cake is almost done baking, combine all topping ingredients in a saucepan and bring to a low boil for about two (2) minutes. Pour over the hot cake. Leave the cake in the pan.

Cake is delicious hot or cold. Also keeps very well.
